Strawberry Lemonade

This strawberry lemonade is great for that hot and sunny day.  It has just the right amount of strawberry and lemon flavor. Everyone will enjoy it. So next time you have a sunny day, try it out.

Also another way to try it, is making a blended drink. By just adding the strawberry lemonade and ice in a blender.

Ingredients:

4 Lemons
3/4 cup Sugar
4 cups Water
1/2 teaspoon Salt
3/4 cup Strawberries

Procedure:

  1. Cut the lemons in half, and sqeeze the juice out of them.
  2. Pour the lemon juice through a fine-mesh strainer in to a 1/2 cup measuring cup. Discard the seeds.
  3. Refrigerate the juice until later needed.
  4. Place water, sugar, salt, and strawberries in a pan over medium heat.
  5. Bring to a boil. Crushing the berries and stirring constantly. Still until all the sugar has dissolved.
  6. Let cool, and refrigerate for about 45 minutes.
  7. Pour the strawberries syrup through a fine-mesh strainer into pitcher, discarding the remaining strawberries.
  8. Add the lemon juice and stir together.
  9. Pour over Ice and serve.

Chocolate Crinkle Cookies

These are the cookies that will hit that chocolate craving, they are great with milk. Crinkle cookies have the perfect contrast of light and dark all in one. They taste amazing and you won’t be able to stop eating them. They are perfect for tea parties or any occasion.

Ingredients:
1/2 cup Vegetable Oil
1/2 cup Cocoa Powder
2 Cups Sugar
2 teaspoons Vanilla
4 Eggs
2 cups Flour
2 teaspoons Baking Powder
1/2 teaspoon Salt
Powdered Sugar

Procedure:

  1. Preheat oven to 375 degrees F.
  2. Combine the oil, cocoa powdered, and sugar.
  3. Add vanilla and eggs.
  4. Mix in the flour, baking powdered, and salt.
  5. Form dough into balls and roll in powdered sugar, and place on cooking sheet.
  6. Bake for 10-12  minutes or until cooking are crackled looking.
  7. Cool on Cookie rack.

Easy Mini Pizza’s

These are a fun and easy way to make little pizza’s, even the kids will enjoy making them. There good for a afternoon snack or great for appetizers at a party. You can choose any of your favorite pizza topping to add on top.

Ingredients:
8 English Muffins
1 cup Pizza Sauce
2 cups Shredded Provolone Cheese
Your choice of Toppings

Procedure:

  1. Preheat oven to 400 degrees F.
  2. Cut the English muffins apart.
  3. Spread 1 tablespoon pizza sauce over each English muffin half.
  4. Sprinkle with cheese.
  5. Add your toppings of choice.
  6. Place on cookie sheet.
  7. Bake for about 10 minutes, cheese will be melted and muffins will have a little crisp to them.
  8. Let cool about 2 minutes and serve.

White Chocolate Mousse

This was a quick and easy recipe to make, a great dessert ready in about 15 minutes.  I love white chocolate, so when I found this recipe it was a must that I tried it.

Ingredients:

1 tablespoon Milk
1 1/2  oz White Chocolate Baking Bar
3/4 cup Milk
1 small box White Chocolate Instant Pudding mix
2 cups Cool Whip, thawed

Procedure:

  1. In a small saucepan, add the 1 tablespoon of milk and the white chocolate bar.
  2. Melt over low heat, till chocolate is all melted and combined.
  3. In a Mixing bowl, whisk together the 3/4 cup of milk and the instant pudding.
  4. Stir in the white chocolate/milk mixture till all combined.
  5. Fold in the Cool Whip.
  6. let sit in refrigerator for about 15 minutes or until ready to serve.
  7. Spoon into individual dessert dishes, top with whip cream, and fruit.

German Pancakes

German pancakes are also sometimes called a Dutch Baby. They are easy to make and require few ingredients of which you most likely have on hand. They are also fun to watch puff up in the oven. They can be served for breakfast, lunch, dinner or as a special snack/dessert. For breakfast serve them with sausages, bacon and fruit. For lunch, how about a fresh green salad with fresh sliced tomatoes and cheese on the pancake; drizzle with oil and balsamic vinegar, add some herbs. For dinner, serve it along with fresh green beans and zucchini from the garden, some homemade applesauce and add a dollop of sour cream on the pancake.

My Favorite way to eat them, squeezed lemon juice, with powdered sugar over top. I could eat these all day long if  I could.

Ingredients:

Pan Size Butter Eggs Milk & Flour
2-3 quarts 1/4 cup 3 3/4 cup each
3-4 quarts 1/3 cup 4 1 cup each
4- 4 1/2 quarts 1/2 cup 5 1 1/4 cups each
4 1/2 -5 quarts 1/2 cup 6 1 1/2 cups each

Procedure:

  • Preheat Oven to 425 degrees F.
  • Melt butter in a pan or baking dish in oven.
  • In a blender add the eggs and mix on high speed for one minute.
  • While still on, gradually pour in the milk, and then slowly add flour. Continue whirling for 30 seconds. (With a rotary beater, beat eggs until light and lemon colored; gradually beat in milk then flour.)
  • Remove the baking dish from oven and pour the batter into the hot melted butter.
  • Return to oven and bake until puffy and well browned – 20 to 25 minutes, depending on the pan size.
  • You will see that about seven minutes into the baking process the pancake begins to puff, then climbs up sides of pan.
  • Dust with powdered sugar.
  • Salmon Patties

    If you like salmon you will love these. This was a quick and easy recipe to whip up for an event I recently attended. The feedback was all wonderfully positive!

    You can also make them large, and have them for dinner with a side salad.  I like to make them into a sandwich with a bun, lettuce, mayonnaise, and mustard. It’s really yummy, and perfect for lunch.

    Ingredients:

    2 Eggs
    1 Medium Onion
    1/2 cup Mashed Potato Flakes
    1 Garlic Clove
    1/4 teaspoon Dill Weed
    1/4 teaspoon Pepper
    1/8 teaspoon Celery Salt
    1 Can (14-3/4 oz) Salmon
    3 teaspoon Olive Oil

    Procedure:

    1. Chop the onion, and mince the garlic.
    2. In a small bowl, combine the eggs, onion, and mashed potato flakes.
    3. Add in the garlic, dill weed, pepper, and celery salt and combine.
    4. Drain the salmon and make sure there are no bones.
    5. Add the salmon to the mixture and combine.
    6. Shape patties into desired size.
    7. In a large nonstick skillet over medium heat, add the oil.
    8. Cook patties for about 6 minutes on each side, or until golden brown.
    9. Serve warm.

    Triple Chocolate Cookies

    A triple-dose of chocolate all in one bite… yes, please!

    This was my first time making these cookies, and I whipped them up for my mom’s bunco night. It’s a pretty fun game that you play with dice. You can check out the idea here.

    Everyone loved them, and the left overs I took to my boyfriends house and they were gone within a couple hours. 🙂 Anyone who loves chocolate will LOVE these!

    Once the dough has all been mixed and its time to put them on the cookie sheet, it will seem really moist. Don’t fret because that’s how it’s supposed to be. Also, you don’t want to bake these cookies to a crisp. I guarantee that you’ll want them to be chewy, so take them out once you see the “skin” on the cookies crack.

    Ingredients:

    1/2 cup Butter
    1 1/2 cups sugar
    1/2 cup Cocoa Powder
    1 tsp Vanilla Extract
    2 Eggs
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1 1/2 cups All-Purpose Flour
    2 1/2 cups White Chocolate Chips
    2 cups Chocolate Chips

    Procedure:

    1. Preheat oven to 325°F.
    2. Cream butter, cocoa powder and sugar.
    3. on low speed, add one egg at a time.
    4. Add vanilla
    5. Add in the flour, baking soda, and salt till all combined.
    6. Add the white chocolate chips and chocolate chips until all mixed in.
    7. Form 1 tablespoon size balls, and place 2 inches apart onto cookie sheet.
    8. Bake for 10 minutes.
    9. Cool on rack.

    Lemon Chicken Fingers and Sauce

    This was a fun recipe to make. When I started with the lemon sauce, the amazing smell really came to life.  When I was frying the chicken, I actually caused a tiny fire to start, so please always be very careful when frying with oil. Never let your oil get too hot it smokes and watch if it should spill or splatter over the pan onto the hot cooking surface, which will cause a flame. If that does happen, pour soda over it.

    Back to the super delicious recipe…… My first bite, I was like “Oh my gosh, these are amazing!”  The lemon in the buttermilk mixture gave the chicken a little kick of lemon flavor, and the chicken is great this way.  But the best part is the lemon sauce that you drizzle over your chicken, or you can dip it in the sauce.  Mouth watering.  This recipe is a must try for everyone!  Kids and adults will love these, I guarantee it.

    Ingredients:

    • 1 Jar (10 ounces) Lemon Curd
    • 1 cup Chicken Broth
    • 1/4 teaspoon Ground Ginger
    • 1/2 teaspoon Soy Sauce
    • 1 cup Buttermilk
    • 1 tablespoon Grated Lemon Peel
    • 2 1/2 cups All-Purpose Flour
    • 2 cups Cornstarch
    • 2 pounds Boneless Skinless Chick Breast
    • Vegetable Oil

    Procedure:

    1. Thaw the Chicken and cut into strips.
    2. Combine lemon curd, chicken broth, ginger, and soy sauce in a saucepan on medium heat.
    3. Stir until lemon curd has dissolved.
    4. In a shallow bowl or pan, combine flour and cornstarch.
    5. in another shallow bowl combine the buttermilk and the lemon peels. 
    6. In a large skillet heat oil.
    7. Dip the chicken into the buttermilk mixture.
    8. Then roll chicken into flour mixture.
    9. Once oil is warm place a few strips of  chicken into the oil, and cook about 3-4 minutes on each side or till golden brown.
    10. Drain on paper towels.
    11. Serve with lemon sauce over the top of the chicken strips.

    White Chocolate Macadamia Nut Cookies

    I love white chocolate, so it’s only natural that white chocolate macadamia nut cookies are one of my favorites.  If I could eat cookies all day long, white chocolate macadamia nut would be in the top three!

    These are pretty basic and simple to make and only take about 40 minutes to make from start to finish, and make about 3 dozen depending on the size.

    Ingredients:

    • 1 cups Butter, softened
    • 3/4 cup Brown Sugar, packed
    • 3/4 cup granulated sugar
    • 1/2 tablespoon Vanilla
    • 2 eggs
    • 2 1/2 cup All-Purpose Flour
    • 1 teaspoons Baking Soda
    • 1/2 teaspoon Salt
    • 1 1/2 cups White Chocolate Chips
    • 1 1/4 cup Macadamia Nuts, chopped

    Procedure:

    1. Preheat oven to 375 degrees F.
    2. Chop the macadamia nuts.
    3. Cream the butter, vanilla, white sugar, and brown sugar in mixing bowl on medium speed.
    4. On low speed add the eggs one at a time till all mixed in and creamed.
    5. Add in the salt and baking soda and mix in.
    6. On low speed slowly add in the flour till all combined.
    7. Mix in white chocolate and macadamia nuts. Mix until all combined and blended.
    8. Form 1  tablespoon size balls, and place 2 inches apart onto cookie sheet.
    9. Bake for 10 minutes or until lightly golden.
    10. Cool on rack.
